Step 1
First we will roast all the picking spices such as cumin seeds, mustard seeds, fennel seeds, fenugreek seeds, onion seeds black pepper and cloves on a very low flame for15 seconds turn off the flame the moment they leave aroma otherwise they will burn
Step 2
Now grind then coarsely once they get cooled
Step 3
Now heat the pan and add 2 tbsp oil ...heat the oil to smoking point and then slow down the flame.now add two dry red chillies and a pinch of asophoetida
Step 4
Saute them for 5 seconds and then add finely chopped tomato...add little bit of salt to cook tomato
Step 5
Now add all the basic ingredients like turmeric powder, red chili powder, coriander powder and saute them for another 5 seconds
Step 6
The masala will turn pulpy and at this point add our achari masala (pickle mix) to the pan.
Step 7
Mix everything together on a low flame and add 1/2 cup of water and salt as required
Step 8
Cook it for another 2 minutes...you will see oil releasing the corners of the pan....at this point switch off the flame our paneer achari is ready
Step 9
Serve it hot ...it goes well with naan or rice
