Bhatura / Puffed Fried Indian Bread
Try this street style bhatura recipe at home and have it with chole/chickpea curry.
Ingredients
- 500 gms All purpose flour (Also known as refined flour or maida)
- 1 cup Semolina (Also known as cream of wheat, sooji, suji, or rava)
- 0.5 tsp Salt
- 2 pinch Baking soda
- 4 tbsp Curd (Also known as plain yogurt)
- 5 cup Oil (For deep frying)
- Warm water (Add as needed to knead the dough)

Instructions
- 1In a large bowl, combine 500 grams of all-purpose flour, 1 cup of semolina, 0.5 teaspoon of salt, 4 tablespoons of curd, and 2-3 tablespoons of oil. Mix well with your hands, gradually adding warm water to form a soft dough. Cover and let it rest for 2 hours.
- 2In a deep cookware, heat 5 cups of oil over medium-high heat until hot for deep frying.
- 3Divide the dough into 50-gram portions and shape each into a ball. Roll out each ball into a round or oval shape using a rolling pin, dusting with all-purpose flour to prevent sticking. Carefully place the rolled dough into the hot oil and deep fry until golden brown on both sides.
- 4Remove the fried bhatura from the oil and drain on paper towels. Serve hot with chickpea curry and pickle.
