Step 1
Cook rice and keep it ready. Heat coconut oil in a pan on medium heat. Once the oil is hot, add mustard seeds. Once it pops, add urad dal and chana dal. Fry until the dal turns golden brown. Add curry leaves, green chillies. Fry it for a few seconds and then add chopped garlic. Saute it for 30 seconds.
Step 2
Add finely chopped onions to the mixture. Fry it for 2-3 minutes. Then add chopped tomatoes. Cook until the water evaporates. You can increase the flame. Once it gets cooked and turns mushy, reduce the heat. Keep stirring and add one by one - turmeric powder, chilli powder, coriander powder and salt.
Step 3
Stir until the masala mixture leaves oil. Now add the cooked rice and mix well. Finally add chopped coriander leaves and lemon juice (I used half a size of a big lemon)
Step 4
Serve as it is or with Raita or with any crunchy Snacks.
