Step 1
Chop yam into cubes and boil in water with some salt till its 80% cooked. Then drain the water and keep it aside.
Step 2
In the mean time heat oil in a pan and add mustard seeds.
Step 3
Once the mustard seeds splutter, add finely chopped ginger, slit green chilies and curry leaves and fry for 2 mins.
Step 4
Add sliced onions and cook till its golden brown. Add turmeric and red chili powder and let it cook for another minute.
Step 5
Now add the partially cooked yam along with some salt and let it cook till the yam turns light golden brown in color. Its now ready to serve as a side dish with rice or roti.
