    Step 1
    Roast the moong dal till it is fried well & removes the raw smell of moong dal.
    Step 2
    Then cook it in cooker by putting double the quantity of water as to the amount of dal. Then give 4 to 5whistles & keep it aside for the pressure in cooker to release normally.
    Step 3
    Now grind the shredded coconut in mixer in 3 stages - First grind the coconut with no water or very less water & squeeze the milk from it into a bowl & keep it aside. - Let us call it 1st milk. Next put the squeezed coconut back into the mixer, add 1/2 cup of water & grind & squeeze out the milk again & keep it aside in a 2nd bowl. I.e. 2nd milk. Now lastly grind again with 1/2 cup water & squeeze the milk completely which is the 3rd milk.
    Step 4
    Now remove the cooked moong dal from cooker, add the 3rd coconut milk & boil all together till it is cooked well. Add jaggery as per your liking for sweetness & boil it well. Then add 2nd milk & boil again. After ithe mixture is as per the required thickness of payasam add 1st milk.
    Step 5
    When the 1st milk starts to boil switch off the gas.
    Step 6
    Now take a small kadai put 1 tbsp of water in it & boil it with a pinch of salt. Then after it has cooled down add it to the moong dal-coconut mixture after gas is switched off. Then add cashews & raisins fried in ghee. Moong dal payasam is ready to be served.
