Step 1
Keep cooker on gas with water in it. Put 1 ltr milk in a big thick bottomed vessel & keep it in the cooker. Wash rice & put it in the milk alongwith sugar, mix it well, close it with a holed lid or with steel jhali. Next, close the cooker with whistle on it. Keep the gas on full flame. When the cooker is about to whistle sim the gas to low flame & keep it on gas for 45 minutes to 1 hr. Please note that the vessel in the cooker should be big so that milk does not spill over.
Step 2
After 1 hr. switch off the gas. Then after the cooker cools down remove the vessel from the cooker. The milk-rice-sugar content will be creamish in colour & reduce to half.
Step 3
Keep small kadai on gas, put ghee in it & saute cashew & raisins.
Remove the cashews & raisins from ghee & put it over the milk. Do not pour the ghee. Rice payasam/kheer is ready. Serve it as dessert.
