Instructions
- 1Remove all shells from the prawns, leaving only the meat. Rinse and pat dry with paper towels.
- 2In a bowl, combine the salt and turmeric powder, mixing thoroughly to create an even preservation mixture.
- 3Toss the shelled prawns in the salt and turmeric mixture, ensuring each prawn is thoroughly coated. Place in a non-reactive container.
- 4Cover the container and refrigerate for 24 hours to allow the salt and turmeric to penetrate the prawns.
- 5Thread the prawns onto clean cotton string or food-safe twine, spacing them slightly apart so air can circulate around each prawn.
- 6Hang the strung prawns in direct sunlight in a clean, well-ventilated area. Bring them indoors at night to prevent moisture absorption. Repeat daily for 15 to 20 days until the prawns are completely dried, hard, and brittle. They should be dark orange-yellow in color and have no moisture remaining.
- 7Once completely dried, remove prawns from the string and store in an airtight container in a cool, dry place. They will keep for several months.
