Prawn Powder
A savory spiced prawn powder made from dried prawns, perfect as a spread on bread and butter or as a seasoning. This traditional condiment combines crispy dried prawns with warming spices.
Ingredients
- 1 pound Dried prawns (A seer is approximately 1 pound. Can use store-bought dried prawns or make using recipe 121)
- 1 teaspoon Red chili powder (Adjust to taste)
- 0.5 teaspoon Ground nutmeg (Freshly grated preferred)
Instructions
- 1Place the dried prawns in a bowl and wash them thoroughly under cold running water to remove any impurities. Drain well.
- 2Spread the washed prawns on a baking sheet and dry them over low heat in the oven at 200°F (95°C) or in a dry skillet over low heat, stirring occasionally, until they become completely crisp and brittle. This should take about 15-20 minutes in the oven or 10-12 minutes in a skillet.
- 3Remove the prawns from heat and allow them to cool completely to room temperature. This ensures they remain crisp for grinding.
- 4Place the cooled crisp prawns in a food processor or spice grinder along with the red chili powder and ground nutmeg. Pulse and grind until you achieve a fine powder consistency.
- 5Pass the ground prawn mixture through a fine-mesh sieve to remove any larger pieces and ensure a uniform fine powder. Discard any coarse bits or grind them again.
- 6Transfer the prawn powder to a clean, dry, airtight glass bottle or jar. Store in a cool, dry place. Use within 2-3 months for best flavor. Serve by spreading a teaspoonful over buttered bread as a savory relish.
