Prawn Powder

Instructions
- 1Strip the prawns of their shells, removing all shell pieces completely. Ensure prawns are clean and deveined.
- 2Mix the salt with turmeric powder. Coat the peeled prawns thoroughly with this mixture and place in a covered container. Keep refrigerated for 1 day.
- 3Thread the salted prawns onto clean kitchen string or food-safe twine, spacing them slightly apart to allow air circulation.
- 4Hang the strung prawns in direct sunlight in a well-ventilated area. Bring them indoors at night. Repeat this process daily for 15 to 20 days until the prawns are completely dried, hard, and brittle. Alternatively, use a food dehydrator at 140°F for 8-12 hours.
- 5Once the prawns are completely dried and brittle, break them into smaller pieces and grind in a spice grinder or food processor until you achieve a fine powder. Sift if desired for a finer texture.
- 6Store the prawn powder in an airtight container in a cool, dry place. It will keep for several months and can be used as a seasoning for curries, rice, and vegetable dishes.
