A simple and flavorful Indian side dish featuring crispy potatoes seasoned with turmeric, chili powder, and aromatic spices.

Ingredients

  • 2 units Potatoes, peeled and cut into pieces (Cut into long or bite-sized pieces)
  • 0.125 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Fennel seeds (Divided use)
  • 0.125 teaspoon Mustard seeds
  • 0.5 unit Onion, sliced
  • 1 sprig Curry leaves
  • 2 tablespoons Oil
  • 1 teaspoon Salt (Adjust to taste)

Instructions

  1. 1Peel the potatoes and cut them into long or bite-sized pieces. Season with turmeric powder and chili powder, ensuring an even coating.
  2. 2Heat oil in a pan over medium heat. Add mustard seeds and half of the fennel seeds. Stir briefly, then add the seasoned potatoes. Roast until they begin to soften.
  3. 3Once the potatoes are halfway cooked, add the sliced onion and salt. Continue to roast until the onions and potatoes are fully cooked and crispy.
  4. 4Add the remaining fennel seeds and curry leaves for flavor. Stir briefly and turn off the heat.
  5. 5Serve the potato fry hot as a side dish with rice or any variety of rice dishes.
