- 1Peel the potatoes and cut them into long or bite-sized pieces. Season with turmeric powder and chili powder, ensuring an even coating.
- 2Heat oil in a pan over medium heat. Add mustard seeds and half of the fennel seeds. Stir briefly, then add the seasoned potatoes. Roast until they begin to soften.
- 3Once the potatoes are halfway cooked, add the sliced onion and salt. Continue to roast until the onions and potatoes are fully cooked and crispy.
- 4Add the remaining fennel seeds and curry leaves for flavor. Stir briefly and turn off the heat.
- 5Serve the potato fry hot as a side dish with rice or any variety of rice dishes.
