Potato Masala Fry
Stir fried potatoes with aromatic spices, perfect as a side dish.
Ingredients
- 3 units Potatoes
- 4 tablespoons Coconut oil
- 2 tablespoons Water
- 1 teaspoon Fennel seeds
- 6 units Garlic flakes (Chopped)
- 1 inch Ginger (Chopped)
- 2 units Green chillies (Chopped)
- 2 sprigs Curry leaves
- 1 unit Onions (Chopped)
- 1 teaspoon Red chilli powder
- 0.25 teaspoon Turmeric
- 0.25 teaspoon Fennel powder
- 2 sprigs Coriander leaves

Instructions
- 1Heat a pan and add the chopped potatoes. Pour in 1 tablespoon of oil and 2 tablespoons of water. Add salt to taste. Cover with a lid and cook on low heat until the potatoes are tender. Mash half of the potatoes and transfer them to another vessel.
- 2In the same pan, add the remaining oil and heat it. Add fennel seeds, garlic, ginger, green chillies, and curry leaves. Sauté well, then add the chopped onions and cook until they are light golden brown. Reduce the heat and add red chilli powder, turmeric, and fennel powder. Finally, add the cooked potatoes and coriander leaves. Stir well to combine, form into a lump, cover, and cook on low heat for 2 minutes.
- 3Serve the potato masala fry hot as a side dish. It pairs well with curd rice.
