Ingredients

  • 4 medium Potato (Chopped lengthwise)
  • 1 tablespoon Cumin seeds
  • 3 count Green chillies (Chopped)
  • 1 inch Ginger (Finely chopped)
  • 1 teaspoon Turmeric
  • 2 teaspoons Red chilli powder
  • 1 teaspoon Amchoor (dried mango powder)
  • 2 teaspoons Kasoori methi (Crushed)
  • 1 teaspoon Garam masala
  • 1 handful Cilantro (Chopped)
  • 2 tablespoons Oil
  • 1 to taste Salt

Instructions

  1. 1Boil the potatoes until tender. Once cooked, peel and chop them into your preferred shape, such as lengthwise slices.
  2. 2Heat oil in a wide pan over medium heat. Add cumin seeds, chopped ginger, and chopped green chillies. Sauté until the ginger's raw aroma dissipates.
  3. 3Add the chopped boiled potatoes to the pan. Stir well to coat them in the oil and spices.
  4. 4Incorporate turmeric, red chilli powder, amchoor, garam masala, and salt into the pan. Mix thoroughly and allow the potatoes to fry slightly in the oil.
  5. 5Add crushed kasoori methi and cook for a few more minutes until the potatoes are fully cooked. Turn off the heat and garnish with chopped cilantro. Serve with rice or roti.
