Aloo Matar (Potato and Peas) | Instant Pot

Ingredients
- 4 units Potato (Diced into cubes)
- 0.5 cup Green peas (Adjust to your liking)
- 1 unit Onions (Medium sized)
- 1 teaspoon Cumin seeds
- 1 pinch Hing (asafetida)
- 2 tablespoons Oil
- 1 pinch Garam masala
- 0.5 bunch Coriander leaves
- 3 units Tomatoes (Medium sized)
- 4 units Garlic cloves
- 1 inch Ginger
- 4 units Green chillies
- 1 teaspoon Turmeric
- 1.5 teaspoons Red chilli powder (Adjust to the spice level you want)
- 2 teaspoons Coriander powder
- 1 teaspoon Amchoor (dried mango powder)
- 1 to taste Salt

Instructions
- 1Using a mixer grinder, blend the tomatoes, garlic cloves, ginger, and green chillies into a smooth puree. Set aside.
- 2Set the Instant Pot to saute mode. Add oil and heat. Once hot, add hing and cumin seeds, and saute for 30 seconds until aromatic.
- 3Add the onions to the Instant Pot and saute until they become translucent, approximately 2-3 minutes.
- 4Incorporate the prepared puree into the Instant Pot and saute until the raw aroma of the tomatoes dissipates, about 2-3 minutes.
- 5Add salt, turmeric, red chilli powder, coriander powder, and amchoor to the mixture. Saute until the spices are well incorporated and aromatic.
- 6Add the diced potatoes and green peas to the Instant Pot. Close the lid, set to Manual/Pressure Cooker mode on High for 3 minutes, and allow the pressure to release naturally.
- 7Open the lid, add garam masala and coriander leaves. Set to saute mode, mash some potatoes, and let it boil for a few minutes. Serve hot with chapati.
