Aloo Sabji

This is a roadside aloo sabji served along with hot puris.

Ingredients

  • 200 gms Potato
  • 5 cups Water
  • 1 tbsp Kasuri Methi
  • 2 tsp Cumin Seeds
  • 0.25 tsp Asafetida
  • 0.75 tsp Salt
  • 0.75 tsp Red Chilli Powder (Adjust to taste)
  • 0.5 tsp Chaat Masala
  • 1 tsp Garam Masala
  • 0.125 tsp Turmeric
  • 4.5 units Green Chillies
  • 3 tbsp Coriander Leaves (For garnish)
  • 2 tbsp Oil (For frying)

Instructions

  1. 1In a pressure cooker, place the peeled potatoes and add water. Cook for 4 whistles on medium flame. Once done, drain the water and roughly mash the potatoes.
  2. 2In a pan, heat oil and add cumin seeds. Once they splutter, add green chillies, salt, red chilli powder, asafetida, turmeric, and chaat masala. Stir in the mashed potatoes.
  3. 3Mix the ingredients for 2 minutes, then add water and bring to a boil. Garnish with coriander leaves before serving.
