Aloo Sabji
This is a roadside aloo sabji served along with hot puris.
Ingredients
- 200 gms Potato
- 5 cups Water
- 1 tbsp Kasuri Methi
- 2 tsp Cumin Seeds
- 0.25 tsp Asafetida
- 0.75 tsp Salt
- 0.75 tsp Red Chilli Powder (Adjust to taste)
- 0.5 tsp Chaat Masala
- 1 tsp Garam Masala
- 0.125 tsp Turmeric
- 4.5 units Green Chillies
- 3 tbsp Coriander Leaves (For garnish)
- 2 tbsp Oil (For frying)

Instructions
- 1In a pressure cooker, place the peeled potatoes and add water. Cook for 4 whistles on medium flame. Once done, drain the water and roughly mash the potatoes.
- 2In a pan, heat oil and add cumin seeds. Once they splutter, add green chillies, salt, red chilli powder, asafetida, turmeric, and chaat masala. Stir in the mashed potatoes.
- 3Mix the ingredients for 2 minutes, then add water and bring to a boil. Garnish with coriander leaves before serving.
