- 1In a Kadai, heat ghee or oil over medium heat. Add cumin seeds and ginger garlic paste, sautéing for a few minutes until aromatic. Incorporate red chilli powder, turmeric powder, and cumin powder, adding a little water to prevent burning. Sauté until the oil separates from the spices.
- 2Add cauliflower, cubed potatoes, sliced onions, and sliced tomatoes to the spice mixture. Season with salt and mix thoroughly. Add some water to help cook the vegetables.
- 3Cover the Kadai and cook for about 10-15 minutes, stirring occasionally, until the vegetables are tender and cooked through.
- 4Turn off the heat and garnish with chopped coriander leaves. Serve hot.
