Onion Fry

A simple and flavorful Indian Malabar side dish featuring onions fried with spices and coconut, perfect as a vegetable accompaniment.

Ingredients

  • 2 units White onions, sliced lengthwise
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.5 cup Coconut, shredded
  • 1 teaspoon Mustard seeds
  • 2 units Dry red chillies
  • 1 sprig Curry leaves
  • 3 tablespoons Coconut oil

Instructions

  1. 1In a bowl, combine the sliced onions with salt, turmeric, and red chilli powder. Mix thoroughly, then add the shredded coconut and mix again until well combined.
  2. 2Heat coconut oil in a clay cooking pot over medium heat. Add mustard seeds and allow them to splutter. Then, add dry red chillies and curry leaves, stirring briefly until fragrant.
  3. 3Add the prepared onion mixture to the pot. Sauté well, then cover and cook on low heat for about 7 minutes, allowing the flavors to meld and the onions to soften.
