Onion Fry
A simple and flavorful Indian Malabar side dish featuring onions fried with spices and coconut, perfect as a vegetable accompaniment.
Ingredients
- 2 units White onions, sliced lengthwise
- 1 teaspoon Red chilli powder
- 1 teaspoon Turmeric
- 1 teaspoon Salt
- 0.5 cup Coconut, shredded
- 1 teaspoon Mustard seeds
- 2 units Dry red chillies
- 1 sprig Curry leaves
- 3 tablespoons Coconut oil

Instructions
- 1In a bowl, combine the sliced onions with salt, turmeric, and red chilli powder. Mix thoroughly, then add the shredded coconut and mix again until well combined.
- 2Heat coconut oil in a clay cooking pot over medium heat. Add mustard seeds and allow them to splutter. Then, add dry red chillies and curry leaves, stirring briefly until fragrant.
- 3Add the prepared onion mixture to the pot. Sauté well, then cover and cook on low heat for about 7 minutes, allowing the flavors to meld and the onions to soften.
