Brinjal Onion Fry
A simple and flavorful side dish featuring brinjal and onions, seasoned with spices and fried to perfection. Enjoy with rice.
Ingredients
- 4 units Eggplant (Also known as aubergine or brinjal)
- 2 units White onions
- 2 tablespoons Red chilli powder
- 1 teaspoon Turmeric (Also known as haldi)
- 2 teaspoons Salt
- 4 tablespoons Sunflower oil

Instructions
- 1Clean the eggplants and onions thoroughly under running water. Slice both vegetables lengthwise into thin strips. Marinate them with salt, turmeric, and red chilli powder. Allow the mixture to rest for ten minutes.
- 2Heat the sunflower oil in a pan over medium heat. Add the marinated eggplant and onion mixture to the pan. Cook on low flame for 15 minutes with the lid on, stirring occasionally to ensure even cooking. Do not add water; allow the vegetables to roast in the oil until they are well-cooked and slightly crispy.
