- 2Heat oil in a Kadai over medium heat. Add the marinated brinjal and onions to the pan. Cook on a low flame for 20-25 minutes with the lid closed, stirring occasionally. Ensure the brinjal and onions are well-cooked and tender. Serve hot with roti.
