  • 6 units Brinjal (Slice it long)
  • 1 unit Onions (Big onion - slice it long)
  • 2 teaspoons Turmeric
  • 3 teaspoons Red Chilli Powder
  • 2 teaspoons Salt (Salt as per taste)
  • 3 tablespoons Oil (For frying)

Instructions

  1. 1Clean the brinjal and onions thoroughly in water. Slice both vegetables lengthwise. Marinate them with salt, turmeric, and red chilli powder. Allow the mixture to rest for 20 minutes.
  2. 2Heat oil in a Kadai over medium heat. Add the marinated brinjal and onions to the pan. Cook on a low flame for 20-25 minutes with the lid closed, stirring occasionally. Ensure the brinjal and onions are well-cooked and tender. Serve hot with roti.
