Ingredients
- 1.5 cups Basmati Rice
- 3 teaspoons Oil
- 2.5 teaspoons Black Crushed Pepper
- 1 tablespoon Garlic Cloves (Finely chopped)
- 1 tablespoon Ginger (Finely chopped)
- 1 unit Onions (Finely chopped)
- 2 units Green Chillies (Finely chopped)
- 1 unit Capsicum (Finely chopped)
- 0.5 teaspoon Salt
- 2 teaspoons Soy Sauce
- 1 tablespoon Spring Onion
- 3 large Eggs

Instructions
- 1Bring a pot of water to a boil, add salt and basmati rice. Cook until the rice is fully done. Strain and set aside.
- 2Heat a pan with some oil, crack open the eggs into the pan. Sprinkle with salt and pepper. Scramble the eggs until fully cooked but still soft. Set aside.
- 3In the same pan, heat some oil and add garlic, ginger, onions, red chilies, and green chili. Sauté until fragrant.
- 4Add capsicum to the pan and stir-fry. Add salt, pepper, soy sauce, and spring onions. Mix well.
- 5Add the scrambled eggs to the pan and mix well. Add the cooked rice and combine thoroughly with the eggs and vegetables.
- 6Garnish with spring onion greens and a fried egg. Serve the Egg Fried Rice hot.
