Egg Fried Rice | എഗ്ഗ് ഫ്രൈഡ് റൈസ്

A delightful Indian-style egg fried rice featuring basmati rice, scrambled eggs, and a medley of vegetables and spices, perfect for lunch or dinner.

Ingredients

  • 1.5 cups Basmati Rice
  • 3 teaspoons Oil
  • 2.5 teaspoons Black Crushed Pepper
  • 1 tablespoon Garlic Cloves (Finely chopped)
  • 1 tablespoon Ginger (Finely chopped)
  • 1 unit Onions (Finely chopped)
  • 2 units Green Chillies (Finely chopped)
  • 1 unit Capsicum (Finely chopped)
  • 0.5 teaspoon Salt
  • 2 teaspoons Soy Sauce
  • 1 tablespoon Spring Onion
  • 3 large Eggs

Instructions

  1. 1Bring a pot of water to a boil, add salt and basmati rice. Cook until the rice is fully done. Strain and set aside.
  2. 2Heat a pan with some oil, crack open the eggs into the pan. Sprinkle with salt and pepper. Scramble the eggs until fully cooked but still soft. Set aside.
  3. 3In the same pan, heat some oil and add garlic, ginger, onions, red chilies, and green chili. Sauté until fragrant.
  4. 4Add capsicum to the pan and stir-fry. Add salt, pepper, soy sauce, and spring onions. Mix well.
  5. 5Add the scrambled eggs to the pan and mix well. Add the cooked rice and combine thoroughly with the eggs and vegetables.
  6. 6Garnish with spring onion greens and a fried egg. Serve the Egg Fried Rice hot.
