Spicy Scrambled Eggs
This is a simple recipe which can be enjoyed as is or a side to some dal and rice.
Ingredients
- 4 units Egg
- 1 medium Onion (medium sized)
- 1 medium Tomato (medium sized)
- 1 teaspoon Cumin seeds
- 2 tablespoons Oil
- 0.5 bunch Coriander leaves
- 10 units Curry leaves
- 2 units Green chillies (cut them up small)
- 1.5 tablespoons Ginger garlic paste
- 1 teaspoon Turmeric
- 1 teaspoon Red chilli powder
- 1 teaspoon Cumin powder
- 2 teaspoons Coriander powder
- 1 teaspoon Black crushed pepper
- 1 to taste Salt

Instructions
- 1Beat the eggs with a pinch of salt. Heat a pan with oil over low flame, add the eggs, and scramble them gently until cooked. Set aside.
- 2In the same pan, add more oil if needed. Once hot, add cumin seeds and curry leaves. Sauté until aromatic, then add chopped onions and cook until translucent.
- 3Add ginger garlic paste to the pan and sauté until the raw aroma dissipates. Add chopped tomatoes and cook briefly until softened.
- 4Add turmeric, red chilli powder, cumin powder, coriander powder, black crushed pepper, and salt to the pan. Stir well to combine and cook until the tomatoes are fully cooked.
- 5Return the scrambled eggs to the pan and mix thoroughly with the masala. Garnish with curry leaves and coriander leaves before serving.
