Spicy Scrambled Eggs

This is a simple recipe which can be enjoyed as is or a side to some dal and rice.

Ingredients

  • 4 units Egg
  • 1 medium Onion (medium sized)
  • 1 medium Tomato (medium sized)
  • 1 teaspoon Cumin seeds
  • 2 tablespoons Oil
  • 0.5 bunch Coriander leaves
  • 10 units Curry leaves
  • 2 units Green chillies (cut them up small)
  • 1.5 tablespoons Ginger garlic paste
  • 1 teaspoon Turmeric
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Cumin powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Black crushed pepper
  • 1 to taste Salt

Instructions

  1. 1Beat the eggs with a pinch of salt. Heat a pan with oil over low flame, add the eggs, and scramble them gently until cooked. Set aside.
  2. 2In the same pan, add more oil if needed. Once hot, add cumin seeds and curry leaves. Sauté until aromatic, then add chopped onions and cook until translucent.
  3. 3Add ginger garlic paste to the pan and sauté until the raw aroma dissipates. Add chopped tomatoes and cook briefly until softened.
  4. 4Add turmeric, red chilli powder, cumin powder, coriander powder, black crushed pepper, and salt to the pan. Stir well to combine and cook until the tomatoes are fully cooked.
  5. 5Return the scrambled eggs to the pan and mix thoroughly with the masala. Garnish with curry leaves and coriander leaves before serving.
