Egg Burji

A flavorful and spicy Indian dish made with scrambled eggs, onions, tomatoes, and a blend of spices, perfect for breakfast, lunch, or dinner.

Ingredients

  • 2 units Onions, chopped
  • 2 units Green chillies, chopped
  • 0.5 inch Ginger, finely chopped
  • 1 unit Tomatoes, finely chopped
  • 0.5 teaspoon Turmeric powder
  • 0.5 tablespoon Kashmiri chili powder
  • 0.5 teaspoon Garam masala
  • 0.75 teaspoon Salt
  • 5 units Eggs, beaten
  • 2 tablespoons Oil
  • 2 tablespoons Coriander leaves, chopped

Instructions

  1. 1Heat oil in a pan over medium heat. Add the chopped ginger and green chillies, stirring quickly to release their flavors.
  2. 2Add the chopped onions to the pan. Sauté until they are soft and translucent, about 4-5 minutes.
  3. 3Stir in the chopped tomatoes and cook for 2-3 minutes. Reduce the heat to low and add salt, turmeric powder, Kashmiri chili powder, and garam masala. Sauté for a minute until the spices are fragrant.
  4. 4Pour the beaten eggs into the pan. Increase the heat to medium and stir continuously for 4-5 minutes until the eggs are fully cooked. Scrape any eggs sticking to the sides of the pan with a spatula.
  5. 5Just before turning off the heat, add the chopped coriander leaves and mix well. Serve hot.
