Ingredients
- 2 units Onions, chopped
- 2 units Green chillies, chopped
- 0.5 inch Ginger, finely chopped

Instructions
- 1Heat oil in a pan over medium heat. Add the chopped ginger and green chillies, stirring quickly to release their flavors.
- 2Add the chopped onions to the pan. Sauté until they are soft and translucent, about 4-5 minutes.
- 3Stir in the chopped tomatoes and cook for 2-3 minutes. Reduce the heat to low and add salt, turmeric powder, Kashmiri chili powder, and garam masala. Sauté for a minute until the spices are fragrant.
- 4Pour the beaten eggs into the pan. Increase the heat to medium and stir continuously for 4-5 minutes until the eggs are fully cooked. Scrape any eggs sticking to the sides of the pan with a spatula.
- 5Just before turning off the heat, add the chopped coriander leaves and mix well. Serve hot.
