Instructions
- 1In a bowl, beat the eggs until they become fluffy.
- 2Finely chop the onion, green chilli, and curry leaves.
- 3Heat a pan over medium flame and sauté the chopped onion, green chilli, and curry leaves until the onion changes color. Remove from heat.
- 4Once the sautéed vegetables have cooled, add them to the beaten eggs. Season with a pinch of salt and mix thoroughly.
- 5Reheat the pan over medium flame, add oil, and pour in the egg mixture. Cook covered for 5 minutes until the omelette is fluffy and golden on one side. Flip and cook briefly on the other side. Transfer to a plate.
- 6Serve the omelette hot with buttered toast.
