Spinach and Egg Oatmeal

A healthy breakfast option featuring soft-boiled eggs and sautéed spinach served over a bed of creamy oatmeal.

Ingredients

  • 4 units Egg (Soft boiled)
  • 1 bunch Spinach
  • 1 unit Cheese (Optional)
  • 3 units Garlic cloves
  • 1 cup Steel cut oats
  • 2 cups Water
  • 1 pinch Salt
  • 1 tablespoon Oil
  • 1 pinch Crushed pepper

Instructions

  1. 1In a saucepan, bring 2 cups of water to a boil. Add 1 cup of steel cut oats and a pinch of salt. Cook over medium heat, stirring occasionally, until the oats reach the desired consistency.
  2. 2Heat oil in a pan over medium heat. Add finely chopped garlic cloves and sauté until fragrant.
  3. 3Add chopped spinach to the pan with the garlic. Season with a pinch of salt and cook over medium heat for 2 minutes until wilted.
  4. 4Prepare 4 soft-boiled eggs by boiling them for 6 minutes, then cooling them in ice water before peeling.
  5. 5Divide the cooked oatmeal into two serving bowls. Add the cooked spinach and place 2 soft-boiled eggs, split in half, on top of each bowl.
  6. 6Top each bowl with cheese and a sprinkle of crushed pepper. Serve warm.
