Instructions
- 1In a saucepan, bring 2 cups of water to a boil. Add 1 cup of steel cut oats and a pinch of salt. Cook over medium heat, stirring occasionally, until the oats reach the desired consistency.
- 2Heat oil in a pan over medium heat. Add finely chopped garlic cloves and sauté until fragrant.
- 3Add chopped spinach to the pan with the garlic. Season with a pinch of salt and cook over medium heat for 2 minutes until wilted.
- 4Prepare 4 soft-boiled eggs by boiling them for 6 minutes, then cooling them in ice water before peeling.
- 5Divide the cooked oatmeal into two serving bowls. Add the cooked spinach and place 2 soft-boiled eggs, split in half, on top of each bowl.
- 6Top each bowl with cheese and a sprinkle of crushed pepper. Serve warm.
