Mushroom Risotto Oatmeal

A healthy breakfast recipe combining the creamy texture of risotto with the wholesome goodness of oatmeal, enhanced with mushrooms and a hint of spice.

Ingredients

  • 2 cups Mushrooms, sliced
  • 5 units Garlic cloves
  • 1 unit Onion, chopped
  • 0.5 teaspoon Salt (Adjust to taste)
  • 1 cup Milk, 2%
  • 1 teaspoon Chili flakes
  • 1 tablespoon Scallions, finely chopped
  • 1 tablespoon Cilantro, finely chopped
  • 1 teaspoon Butter
  • 0.5 teaspoon Black crushed pepper
  • 1 tablespoon Cheese, grated
  • 1 cup Steel cut oats
  • 1 cup Water

Instructions

  1. 1In a pan, melt the butter over medium-high heat. Add the sliced mushrooms and sauté until they turn golden brown.
  2. 2Add salt and chili flakes to the mushrooms and cook for a few more minutes. Reserve some mushrooms for topping.
  3. 3Add the chopped garlic and onions to the pan with the mushrooms. Cook until the onions become translucent.
  4. 4Stir in the steel cut oats and cook for an additional minute.
  5. 5Pour in the water and milk, then cook over medium heat until the mixture reaches the desired consistency.
  6. 6Mix in the cheese and adjust the salt to taste.
  7. 7Serve the oatmeal in a bowl, top with reserved mushrooms, sprinkle with black pepper, and garnish with scallions, cilantro, and additional cheese.
