Mushroom Risotto Oatmeal
A healthy breakfast recipe combining the creamy texture of risotto with the wholesome goodness of oatmeal, enhanced with mushrooms and a hint of spice.
Ingredients
- 2 cups Mushrooms, sliced
- 5 units Garlic cloves
- 1 unit Onion, chopped
- 0.5 teaspoon Salt (Adjust to taste)
- 1 cup Milk, 2%
- 1 teaspoon Chili flakes
- 1 tablespoon Scallions, finely chopped
- 1 tablespoon Cilantro, finely chopped
- 1 teaspoon Butter
- 0.5 teaspoon Black crushed pepper
- 1 tablespoon Cheese, grated
- 1 cup Steel cut oats
- 1 cup Water

Instructions
- 1In a pan, melt the butter over medium-high heat. Add the sliced mushrooms and sauté until they turn golden brown.
- 2Add salt and chili flakes to the mushrooms and cook for a few more minutes. Reserve some mushrooms for topping.
- 3Add the chopped garlic and onions to the pan with the mushrooms. Cook until the onions become translucent.
- 4Stir in the steel cut oats and cook for an additional minute.
- 5Pour in the water and milk, then cook over medium heat until the mixture reaches the desired consistency.
- 6Mix in the cheese and adjust the salt to taste.
- 7Serve the oatmeal in a bowl, top with reserved mushrooms, sprinkle with black pepper, and garnish with scallions, cilantro, and additional cheese.
