Onion Bhaji Without Besan

- 4 unit Green chillies
- 1 teaspoon Cumin seeds
- 1 handful Coriander leaves, chopped (Chopped)
- 1 teaspoon Ajwain, hand crushed (Hand crushed)
- 1 teaspoon Turmeric
- 1 teaspoon Red chilli powder
- 1 teaspoon Cumin powder
- 0.5 cups Rice flour
- 1 tablespoon Sooji
- 1 tablespoon Maida
- 1 teaspoon Salt (Adjust as per taste)

- 1In a bowl, combine the sliced onions, green chillies, and chopped coriander leaves.
- 2Add salt to the mixture and mix thoroughly. Allow it to rest for a few minutes to let the onions release their moisture.
- 3Incorporate cumin seeds, ajwain, turmeric, red chilli powder, cumin powder, rice flour, sooji, and maida into the onion mixture. Mix well to combine.
- 4Gradually add water to the mixture, stirring to form a wet batter. The batter should be just moist enough to bind the ingredients without becoming too watery.
- 5Heat oil in a deep pan over medium heat. Carefully drop spoonfuls of the batter into the hot oil and fry until golden brown. Ensure the bhajis are cooked evenly.
- 6Remove the bhajis from the oil and drain on paper towels. Serve hot with ketchup, green chutney, or raita.
