God Appo (Jaggery Dosa)

Ingredients
- 250 grams Dosa rice (Soak for at least 6 hours, preferably 8 hours)
- 125 grams Boiled rice (Soak for at least 6 hours, preferably 8 hours)
- 1 teaspoon Fenugreek seeds (Soak separately overnight)
- 2 large Egg
- 1 teaspoon Cooking soda
- 150 grams Jaggery (Adjust to taste)
- 1 cup Water (For dissolving jaggery and adjusting batter consistency)

Instructions
- 1Grind the soaked fenugreek seeds into a fine paste using a mixer grinder.
- 2Add the soaked dosa rice and boiled rice to the fenugreek paste and grind well. Add water as needed to achieve a thick batter consistency.
- 3Dissolve the jaggery in water and add it to the rice batter. Mix thoroughly.
- 4Transfer the batter to a large vessel to allow room for fermentation. Let it ferment overnight, approximately 8 hours.
- 5After fermentation, add cooking soda and eggs to the batter. Beat well to combine.
- 6Heat a tawa and pour a ladleful of batter onto it. Spread the batter evenly to form a dosa. Cook until golden brown on both sides. Repeat with remaining batter.
