Sweet Rice Fritters/Neyyappam
A popular snack from Kerala, these sweet rice fritters, known as Neyyappam, are deliciously rich and perfect for tea time.
Ingredients
- 2 cups White raw rice (Soak for 3-4 hours)
- 500 grams Jaggery (Melt with water to make a solution)
- 1 teaspoon Cumin seeds
- 4 units Green cardamom pods
- 1 teaspoon Salt
- 3 tablespoons All purpose flour
- 0.5 teaspoon Baking soda
- 2 tablespoons Ghee
- 2 cups Sunflower oil (For frying)
- 0.5 cup Coconut (shredded)
- 0.5 cup Water (For melting jaggery)

Instructions
- 1Rinse the white raw rice thoroughly and soak it in water for 3-4 hours. After soaking, drain the water and set the rice aside.
- 2In a pan, combine 500 grams of jaggery with 1/2 cup of water. Heat on a low flame until the jaggery melts completely, forming a smooth solution.
- 3In a mixer grinder, combine the soaked rice, jaggery solution, salt, cardamom pods, cumin seeds, and ghee. Grind to form a fine, thick batter.
- 4Transfer the batter to a mixing bowl. Add all-purpose flour, baking soda, and shredded coconut. Mix thoroughly until well combined.
- 5Heat sunflower oil in a pan over medium heat. Using a large spoon, carefully drop spoonfuls of batter into the hot oil. Fry until the fritters are golden brown, maintaining a low to medium flame.
- 6Remove the fritters from the oil and drain on paper towels. Serve hot with a cup of tea.
