Cashew Rice Balls/Ariyunda

A sweet snack made with rice and coconut.

Ingredients

  • 1000 gms Parboiled rice (Also known as idli rice)
  • 500 gms Jaggery
  • 4 cups Coconut, grated
  • 250 gms Cashew nuts (Crushed for mixing, whole for decoration)
  • 0.5 cup Water (For melting jaggery)

Instructions

  1. 1Dry roast the cleaned parboiled rice in a pan over medium heat until it turns golden brown. Allow it to cool completely.
  2. 2Once the rice has cooled, use a mixer grinder to grind it into a fine powder. Transfer the powdered rice to a mixing bowl.
  3. 3Melt the jaggery by boiling it with a small amount of water. Strain the mixture to remove impurities. Add the grated coconut and crushed cashew nuts, mixing thoroughly.
  4. 4Add the powdered rice to the jaggery mixture and mix well. Allow the mixture to cool completely.
  5. 5Once the mixture has cooled, shape it into equal-sized balls. Decorate each ball with a whole cashew nut.
