A Malabar Snack/Kannur Appam

Soft, spongy, and delicious sweet cake from Kannur, perfect as a snack.

Ingredients

  • 2 cups White rice (cooked)
  • 1.5 cups Cooked rice (You can use any rice except brown rice or Matta rice. The color of the rice must be white.)
  • 1.5 cups Sugar
  • 0.5 cup All purpose flour
  • 5 units Green cardamom pods
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 cups Sunflower oil

Instructions

  1. 1Rinse the white rice thoroughly and soak it in warm water for 4 hours.
  2. 2After 4 hours, drain the water from the rice. Add 1.5 cups of cooked rice and 1.5 cups of sugar to the soaked rice.
  3. 3Add 0.5 cup of all-purpose flour and 5 green cardamom pods to the rice mixture. Mix thoroughly.
  4. 4Transfer the mixture to a mixer grinder. Grind with a little water until the consistency is smooth but not too thin.
  5. 5Allow the batter to rest for 5-8 hours to ferment.
  6. 6After fermentation, add 0.5 teaspoon of baking soda to the batter and mix well.
  7. 7Heat an appam mold over medium flame. Pour sunflower oil to fill 3/4 of the mold. Spoon the batter into the mold, fry for 30 seconds, then flip and fry until golden brown on one side. Remove from oil when done.
  8. 8Serve the sweet and spongy Kannur appam warm and enjoy!
