A Malabar Snack/Kannur Appam
Soft, spongy, and delicious sweet cake from Kannur, perfect as a snack.
Ingredients
- 2 cups White rice (cooked)
- 1.5 cups Cooked rice (You can use any rice except brown rice or Matta rice. The color of the rice must be white.)
- 1.5 cups Sugar
- 0.5 cup All purpose flour
- 5 units Green cardamom pods
- 0.5 teaspoon Baking soda
- 0.25 teaspoon Salt
- 2 cups Sunflower oil
Instructions
- 1Rinse the white rice thoroughly and soak it in warm water for 4 hours.
- 2After 4 hours, drain the water from the rice. Add 1.5 cups of cooked rice and 1.5 cups of sugar to the soaked rice.
- 3Add 0.5 cup of all-purpose flour and 5 green cardamom pods to the rice mixture. Mix thoroughly.
- 4Transfer the mixture to a mixer grinder. Grind with a little water until the consistency is smooth but not too thin.
- 5Allow the batter to rest for 5-8 hours to ferment.
- 6After fermentation, add 0.5 teaspoon of baking soda to the batter and mix well.
- 7Heat an appam mold over medium flame. Pour sunflower oil to fill 3/4 of the mold. Spoon the batter into the mold, fry for 30 seconds, then flip and fry until golden brown on one side. Remove from oil when done.
- 8Serve the sweet and spongy Kannur appam warm and enjoy!
