Sweet Snack/Kunji Kalathappam
This traditional snack is a really yummy to have!!
Ingredients
- 2 cups Jeerakashala rice (Soak the jeerakashala rice in water for 3 hours)
- 1 cup White rice (cooked)
- 1.5 cups Sugar (1 cup for batter, 0.5 cup for coconut sweet)
- 0.5 teaspoon Salt
- 1 teaspoon Green cardamom pods (Crushed)
- 1 cup Sunflower oil
- 1 cup Coconut (grated)
- 1 tablespoon Ghee
Instructions
- 1In a mixer grinder, combine the soaked and drained jeerakashala rice, cooked white rice, sugar, salt, and crushed cardamom pods. Gradually add water and grind until a smooth batter is formed. Ensure the batter is not too loose.
- 2Heat a deep pan over medium flame and add sunflower oil. Pour a large spoonful of the batter into the hot oil. Cook on low-medium flame for 3-4 minutes without flipping.
- 3Once the appam is cooked, remove it from the oil and set aside.
- 4In a pan over medium flame, add ghee, grated coconut, and sugar. Mix well and cook for 5 minutes until the mixture is well combined and aromatic. Turn off the flame.
- 5Serve the kunji kalathappam with the coconut sweet and a cup of tea.
