Ingredients
- 2 cups White rice
- 1 cup Chana dal
- 0.5 cup Tuvar (Toor Dal)

Instructions
- 1Combine the white rice, chana dal, tuvar dal, and split urad dal in a large bowl. Cover with water and allow to soak for 4 hours.
- 2After soaking, drain the water and transfer the mixture to a mixer grinder. Add dry red chillies and salt, then grind to a coarse consistency.
- 3To the ground mixture, add finely chopped onions and curry leaves. Stir in a pinch of hing and jeera, mixing thoroughly to form a thick batter.
- 4Heat a dosa tava over medium heat. Pour a ladleful of batter onto the tava, spreading it into a thick circle. Drizzle oil around the edges, cook until golden brown, then flip to cook the other side until crisp.
- 5Serve the Ada Dosas hot with butter or coriander chutney. For best flavor, allow the batter to rest for an hour before cooking.
