Step 1
Cook the boneless beef adding salt,1/2 teaspoon of turmeric powder and 1/4 teaspoon of garam masala.it will take 20-25 minutes to cook well.turn off the flame,allow it to cool and crush the cooked beef in a mixer grinder(don’t grind more,just crush).
Step 2
now put a pan on medium flame.add 2 tablespoons of vegetable oil.then add chopped onions,green chillies,ginger paste,salt,turmeric powder,garam masala and black pepper powder.saute well until the onions are translucent.
Step 3
Transfer the cooked and crushed beef into this and mix well.our filling is ready.
Step 4
now we will make the covering.for that,take 2 cups of all purpose flour in a mixing bowl.add salt and 2 tablespoons of vegetable oil.knead it to make a fine soft dough adding little by little warm water.
Step 5
once the dough is ready,take small balls of it and roll it out about 4 inches in diameter.now fill it with the beef filling for four pathiries.cover it with another covering and cut in 4 equal parts using a knife or pathiri cutter.(shown in figure)
Step 6
Now fry this pathiries in sunflower oil till it turns golden brown in colour.
Step 7
Enjoy the delicious malabar irachi pathiri with a cup of hot tea.
