Step 1
Preparing puris for pani puri - Readymade puris are available in any provision store or u can get pani puri pappads (as shown in photo) & deep fry in oil & keep it aside.
Step 2
Next preparing pani puri masala - Wash tamarind well & boil it alongwith Jaggery & water till the jaggery melts completely. After it cools squeeze & strain the liquid & keep it aside in a bowl. Next wash coriander & mint leaves and grind it alongwith ginger, green chillies, lime & water & keep this also aside in a bowl.
Step 3
In another vessel, mix all masalas i.e. - black pepper powder, salt, jeera powder, red chilly powder, asfoetida , chaat masala & pani puri masala, add required amount of water & boil altogether for 2 minutes & after it cools down add the masala liquid equally into tamarind & coriander bowls & keep it in refrigerator for further cooling.
Step 4
Boil potatoes & smash it well & keep it in a separate bowl. Also keep plain boondis in a separate bowl.
Step 5
Pani puri is ready to be served. Keep all the above items i.e. tamarind water, coriander-mint water, pani puris, potatoes & boondis each in separate bowls as shown in photo.
Step 6
Next take a plate keep one puri in it by making a hole on the top of the puri as shown in the photo. Put potatoes, boondis, cold tamarind water & cold coriander-mint water into the hole of the puris & eat the puris one puri at a time.
Step 7
Instead of potatoes & boondis u can put cooked green moongs for fillings.
