Sardines (French fashion)
A classic French preparation of sardines with a rich egg sauce.
Ingredients
- 12 sardines Sardines

Instructions
- 1Remove the skins and tails from the sardines.
- 2Heat 1 tablespoon of butter in a pan. Sauté bread slices until golden brown.
- 3In a heat-safe bowl set over simmering water (a double boiler), whisk together the egg yolks, tarragon vinegar, cider vinegar, made mustard, salt, and 1 tablespoon of butter. Stir constantly until the sauce thickens.
- 4Arrange the sardines on the toasted bread. Pour the sauce over the sardines. Serve with olives, if desired.
