Dressing for Cole-Slaw
A classic dressing for cole-slaw, modernized for ease of preparation.
Ingredients
- 3 count Egg yolks
- 1/2 teaspoonful Prepared mustard
- 1/4 teaspoonful Black pepper
- 1/4 teaspoonful Salt
- 1/3 cup White vinegar
- 2 tablespoonfuls Butter

Instructions
- 1In a heatproof bowl, whisk together the egg yolks, mustard, pepper, and salt.
- 2Add the vinegar and butter to the egg yolk mixture. Place the bowl over a saucepan of simmering water (double boiler). Cook, stirring constantly, until the dressing slightly thickens, about 10-15 minutes. Be careful not to let the water touch the bottom of the bowl, or the eggs may scramble.
- 3Remove the dressing from the heat and set aside to cool completely. This will take about 10 minutes. Once cooled, the dressing is ready to use. It can be stored in the refrigerator for up to 3 days.
