Dressing for Fruit Salad

A sweet dressing for fruit salad.

Ingredients

  • 1 cup Sugar
  • 1/2 cup Water
  • 3 large Egg yolks
  • 2 medium Lemon juice
  • 1/2 cup Wine (optional)
  • 1 tablespoon Lemon juice

Instructions

  1. 1In a small saucepan, combine the sugar and water. Bring to a boil over medium heat and cook for 5 minutes, or until slightly thickened.
  2. 2Pour the hot sugar syrup over the beaten egg yolks. Return the mixture to the saucepan and cook over low heat or a double boiler, stirring constantly, until slightly thickened. Be careful not to scramble the eggs.
  3. 3Remove from heat and let cool. Stir in the lemon juice. If using wine, add the wine and 1 tablespoon of lemon juice.
