Boiled Salad Dressing

A classic boiled salad dressing recipe.

Ingredients

  • 1 teaspoonful Mustard
  • 1/2 teaspoonful Salt
  • 1/4 teaspoonful Paprika
  • 3 yolks Eggs
  • 4 tablespoonfuls Butter
  • 2 tablespoonfuls Vinegar
  • 1/2 cup Heavy cream
  • 2 tablespoonfuls Lemon juice

Instructions

  1. 1In a double boiler, mix together the mustard, salt, and paprika. Add the egg yolks and stir well.
  2. 2Slowly add the melted butter, vinegar, and lemon juice to the mixture, stirring constantly. Cook in the double boiler over simmering water until the dressing thickens to the consistency of a soft custard, about 15 minutes.
  3. 3Remove from heat and let cool completely. Once cool, add the heavy cream, which has been beaten stiff with a whisk or electric mixer.
