Ingredients

  • 1 cup Flaked Salmon
  • 2/3 cup Milk
  • 1/4 cup Bread crumbs
  • 1 tablespoon Lemon juice
  • 1 large Egg (Slightly beaten)
  • 1/8 teaspoon Paprika
  • 1/4 teaspoon Salt
  • 3 tablespoons Butter
  • 3 tablespoons Flour
  • 1 1/2 cups Milk
  • 1 Egg yolk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. 1In a bowl, combine the flaked salmon, milk, bread crumbs, lemon juice, slightly beaten egg, paprika, and salt. Mix well to combine.
  2. 2Butter small molds or cups. Fill them one-half full with the salmon mixture. Place the molds in a baking pan and add hot water to reach halfway up the sides of the molds. Bake in a moderate oven at 350°F (175°C) for 20 minutes, or until set.
  3. 3Melt the butter in a saucepan. Stir in the flour and cook for a minute. Slowly whisk in the milk, bringing to a boil while stirring constantly. Reduce heat and simmer for about two minutes, stirring frequently. Season with salt and pepper. Remove from heat and whisk in the egg yolk until smooth. (The oil from the salmon may be substituted for melted butter as far as it will go.)
  4. 4Serve the salmon timbales warm, topped with the egg sauce.
