Escalloped Salmon (Two portions)

Ingredients
- 2/3 cup Flaked salmon
- 1 Hard-cooked egg, diced
- 2 tablespoons Butter
- 1 teaspoon Lemon juice
- 1 tablespoon All-purpose flour
- 3 tablespoons Chopped sour pickle
- 2/3 cup Milk
- 1/2 teaspoon Minced fresh parsley
- 1/2 teaspoon Salt
- 4 tablespoons Cracker crumbs
- 1/4 teaspoon Paprika
Instructions
- 1Melt 1 tablespoon of butter in a saucepan over medium heat. Add the flour and whisk until smooth. Gradually whisk in the milk and cook for 1 minute, or until the sauce thickens slightly.
- 2Add the flaked salmon, salt, paprika, diced egg, lemon juice, chopped pickle, and parsley to the sauce. Mix gently with a fork to combine, being careful not to overmix and make the mixture pasty.
- 3Pour the salmon mixture into a well-buttered baking dish. Melt the remaining 1 tablespoon of butter and mix with the cracker crumbs. Sprinkle the buttered crumbs over the top. Bake in a preheated oven at 350°F (175°C) for 25 minutes, or until golden brown and bubbly.
