Mashed Sweet Potatoes (Two portions)

Ingredients

  • 3 good-sized Sweet potatoes
  • 2 C Water
  • 1/2 t Salt
  • 1 T Butter
  • 2 T Milk
  • 1/4 t Paprika

Instructions

  1. 1Wash the sweet potatoes and remove any blemishes. Place the sweet potatoes in a pot with the water.
  2. 2Cook gently over medium heat until the sweet potatoes are tender, about 20 minutes.
  3. 3Drain the sweet potatoes. While still hot, peel them, holding the potatoes on the end of a fork. Mash with a spoon or potato masher, adding the salt, butter, milk, and paprika. Beat for one minute.
  4. 4Pile the mashed sweet potatoes lightly in a buttered baking dish. Place in a moderate oven at 350°F (175°C) for about twenty minutes, or until lightly browned.
