Besan ki Barfi
Festive seasons are coming and when we think of homemade sweets we can't forget besan barfi, a very traditional dessert of India. Let's learn how to make it.
Ingredients
- 2 cups Gram flour
- 1 cup Ghee
- 2 tablespoons Semolina
- 1.5 cups Sugar
- 1 teaspoon Green cardamom powder
- 1 teaspoon Rose water
- 10 strands Saffron
- 0.5 cup Water
- 0.5 cup Almonds, sliced (Sliced for garnish)
Instructions
- 1In a heavy pan, heat 1 cup of ghee over low flame. Add 2 cups of gram flour and mix well. Roast the mixture on low flame for 5 minutes, then add semolina and continue roasting for 20 minutes until the gram flour turns golden brown and releases ghee.
- 2In a separate pan, combine 1.5 cups of sugar with 0.5 cup of water. Boil the mixture, stirring continuously until it reaches a one-string consistency. Turn off the flame and add saffron strands to rose water, rubbing them gently to release color.
- 3Add the rose water and cardamom powder to the sugar syrup. Mix the roasted gram flour into the warm sugar syrup, ensuring a smooth blend. The mixture will begin to thicken.
- 4Transfer the mixture to a tray lined with baking paper. Press and level the mixture to ensure it sets uniformly. Allow it to set for 20 minutes.
- 5Once set, cut the barfi into desired shapes. Garnish with sliced almonds before serving.
