Coconut Barfi

- 4 cups Coconut, grated
- 2 cups Evaporated milk (Can substitute with condensed milk)
- 2 cups Sugar
- 1 pinch Salt
- 6 units Almonds (Sliced or grated)

Coconut Rice Pudding
A traditional baked rice pudding made with fresh coconut milk, sweetened with jaggery or treacle, and flavored with aniseed for a fragrant, creamy dessert.
Instructions
- 1In a wide pan, heat 2 tablespoons of ghee over medium flame. Add 3 cups of grated coconut and stir continuously until the coconut is well-coated and most of its moisture is evaporated. Maintain a medium-low flame to prevent burning.
- 2Once the coconut mixture appears semi-dry, add 2 cups of evaporated milk and 2 cups of sugar. Mix thoroughly. Alternatively, use condensed milk to replace sugar. Stir until the mixture becomes semi-dry again.
- 3Incorporate the remaining 1 cup of grated coconut into the mixture, stirring continuously to prevent burning.
- 4Stir in 1 teaspoon of ground cardamom. Continue cooking until the mixture is sticky but not watery, and it easily leaves the sides of the pan. Turn off the heat.
- 5Grease a flat vessel or pan with ghee. Transfer the barfi mixture into the pan, spreading it evenly to your desired thickness.
- 6Sprinkle sliced almonds over the barfi. Allow it to cool for approximately 30 minutes.
- 7Refrigerate the barfi for 4-5 hours until fully set. Once set, cut into desired shapes and serve.
