- 4 units Tomatoes
- 1 unit Onion
- 5 units Garlic cloves

- 0.5 tablespoon Red chilli powder
- 2 tablespoons Coconut oil
- 0.5 teaspoon Mustard seeds

- 0.25 teaspoon Turmeric
- 0.5 tablespoon Salt
- 0.5 unit Lemon
- 2 cups White rice (Cooked)
- 2 teaspoons Coriander powder

Tomato Chutney

Instructions
- 1Heat coconut oil in a pan over medium heat. Once hot, add mustard seeds and allow them to pop. Add urad dal and chana dal, frying until golden brown. Incorporate curry leaves and green chillies, frying briefly before adding chopped garlic. Sauté for 30 seconds.
- 2Add finely chopped onions to the pan and fry for 2-3 minutes. Then add chopped tomatoes and cook until the water evaporates and the mixture becomes mushy. Stir in turmeric powder, red chilli powder, coriander powder, and salt.
- 3Once the masala mixture releases oil, add the cooked rice and mix thoroughly. Finish with chopped coriander leaves and lemon juice.
- 4Serve the tomato rice hot, either on its own or accompanied by raita or crunchy snacks.
