Instructions
- 1In a pressure cooker, combine 1 cup of toor dal with 3 cups of water. Cook until the dal is thoroughly mashed, typically for 4-5 whistles.
- 2In a vessel, heat 1 tablespoon of ghee and add 1 teaspoon of cumin seeds. Allow the cumin to sputter.
- 3Add chopped green chillies, 1 inch of chopped ginger, and curry leaves to the vessel. Sauté until the raw aroma of ginger dissipates.
- 4Add the chopped tomatoes to the vessel and cook until the oil separates from the mixture.
- 5Stir in 1 teaspoon each of turmeric and red chilli powder. Cook briefly, then add the cooked dal and additional water to achieve the desired consistency. Bring the mixture to a boil.
- 6Reduce the heat and add tamarind paste, crushed jaggery, and salt to taste. Stir well and let the dal simmer for 2 more minutes.
- 7Turn off the heat and garnish the dal with chopped coriander leaves. Serve hot.
