Tomato Chutney

Ingredients
- 3 tbsp Sesame oil
- 1 tsp Whole black urad dal
- 7 count Garlic flakes
- 7 count Shallots
- 4 count Dry red chillies (Preferably Kashmiri chillies)

- 1 count Carrot (Small one)
- 2 tbsp Coriander leaves
- 1 tsp Salt
- 1 sprig Curry leaves
- 1 pinch Asafetida
- 1 tsp Mustard seeds

Instructions
- 1In a pan, heat sesame oil over medium heat. Add the urad dal and sauté until it turns golden brown. Add the garlic flakes and sliced shallots, cooking until the shallots are soft and pink. Incorporate the dry red chillies and sauté briefly.
- 2Add the chopped tomatoes to the pan and sauté until they are well-cooked and smashed. Allow the mixture to cool slightly.
- 3Transfer the cooled tomato mixture to a mixer grinder. Add grated carrot, coriander leaves, and salt. Grind the mixture to a smooth consistency without adding water.
- 4In a small pan, heat sesame oil and add mustard seeds. Once they splutter, add dry chillies, curry leaves, and a pinch of asafetida. Pour this seasoning over the ground chutney and mix well.
