Yam Fry | Suran Sabzi
A flavorful Indian side dish featuring yam cubes fried with aromatic spices and onions, perfect as an accompaniment to rice or roti.
Ingredients
- 2 units Yam, chopped into cubes (Chop into cubes)
- 1 unit Onions, sliced (Sliced)
- 1 inch Ginger, finely chopped (Finely chopped)
- 3 units Green chillies, slit (Slit)
- 1 teaspoon Turmeric
- 2 teaspoons Red chilli powder
- 1 teaspoon Mustard seeds
- 2 tablespoons Oil
- 1 sprig Curry leaves
- 2 teaspoons Salt

Instructions
- 1Chop the yam into cubes and boil in salted water until 80% cooked. Drain and set aside.
- 2In a pan, heat the oil and add mustard seeds. Allow them to splutter.
- 3Add finely chopped ginger, slit green chillies, and curry leaves to the pan. Fry for 2 minutes.
- 4Add sliced onions to the pan and cook until golden brown. Stir in turmeric and red chilli powder, cooking for an additional minute.
- 5Add the partially cooked yam and additional salt to the pan. Cook until the yam turns light golden brown. Serve as a side dish with rice or roti.
