Yam Fry | Suran Sabzi

A flavorful Indian side dish featuring yam cubes fried with aromatic spices and onions, perfect as an accompaniment to rice or roti.

Ingredients

  • 2 units Yam, chopped into cubes (Chop into cubes)
  • 1 unit Onions, sliced (Sliced)
  • 1 inch Ginger, finely chopped (Finely chopped)
  • 3 units Green chillies, slit (Slit)
  • 1 teaspoon Turmeric
  • 2 teaspoons Red chilli powder
  • 1 teaspoon Mustard seeds
  • 2 tablespoons Oil
  • 1 sprig Curry leaves
  • 2 teaspoons Salt

Instructions

  1. 1Chop the yam into cubes and boil in salted water until 80% cooked. Drain and set aside.
  2. 2In a pan, heat the oil and add mustard seeds. Allow them to splutter.
  3. 3Add finely chopped ginger, slit green chillies, and curry leaves to the pan. Fry for 2 minutes.
  4. 4Add sliced onions to the pan and cook until golden brown. Stir in turmeric and red chilli powder, cooking for an additional minute.
  5. 5Add the partially cooked yam and additional salt to the pan. Cook until the yam turns light golden brown. Serve as a side dish with rice or roti.
