Diamond Cut Cake/Vettu Cake

This is a simple cake/snack which has a shape of diamond.

Ingredients

  • 2 cups All purpose flour (Also known as refined flour or maida)
  • 0.5 teaspoon Baking soda
  • 3 units Egg
  • 0.25 teaspoon Salt (Do not add more than specified)
  • 1 cup Powdered sugar
  • 2 cups Vegetable oil or sunflower oil (For deep frying)
  • 0.5 cup Semolina (Also known as cream of wheat, sooji, or rava)
  • 1 teaspoon Vanilla essence
  • 0.5 teaspoon Cardamom powder
  • 1 teaspoon Ghee

Instructions

  1. 1In a mixing bowl, beat the eggs thoroughly. Add powdered sugar, a pinch of salt, vanilla essence, cardamom powder, ghee, and baking soda. Mix well until a smooth egg mixture is achieved.
  2. 2Gradually add all-purpose flour and semolina to the egg mixture, mixing continuously to form a smooth dough. Add water if necessary to achieve the desired consistency.
  3. 3Cover the dough and let it rest for 2 hours to allow it to rise.
  4. 4After resting, sprinkle some all-purpose flour on a clean countertop. Place the dough on the counter and knead it for 5 minutes to achieve a smooth texture.
  5. 5Divide the dough into several portions and roll each into a long rectangular log. Using a sharp knife, cut the logs into small diamond shapes.
  6. 6In a deep pan, heat vegetable oil over medium heat. Deep fry the diamond-shaped dough pieces until they turn golden brown. Remove and drain on paper towels. Sprinkle with powdered sugar and mix gently.
  7. 7Allow the cakes to cool slightly before serving. Store in an airtight container to keep fresh for up to one week.
