Diamond Cut Cake/Vettu Cake
This is a simple cake/snack which has a shape of diamond.
Ingredients
- 2 cups All purpose flour (Also known as refined flour or maida)
- 0.5 teaspoon Baking soda
- 3 units Egg
- 0.25 teaspoon Salt (Do not add more than specified)
- 1 cup Powdered sugar
- 2 cups Vegetable oil or sunflower oil (For deep frying)
- 0.5 cup Semolina (Also known as cream of wheat, sooji, or rava)
- 1 teaspoon Vanilla essence
- 0.5 teaspoon Cardamom powder
- 1 teaspoon Ghee

Instructions
- 1In a mixing bowl, beat the eggs thoroughly. Add powdered sugar, a pinch of salt, vanilla essence, cardamom powder, ghee, and baking soda. Mix well until a smooth egg mixture is achieved.
- 2Gradually add all-purpose flour and semolina to the egg mixture, mixing continuously to form a smooth dough. Add water if necessary to achieve the desired consistency.
- 3Cover the dough and let it rest for 2 hours to allow it to rise.
- 4After resting, sprinkle some all-purpose flour on a clean countertop. Place the dough on the counter and knead it for 5 minutes to achieve a smooth texture.
- 5Divide the dough into several portions and roll each into a long rectangular log. Using a sharp knife, cut the logs into small diamond shapes.
- 6In a deep pan, heat vegetable oil over medium heat. Deep fry the diamond-shaped dough pieces until they turn golden brown. Remove and drain on paper towels. Sprinkle with powdered sugar and mix gently.
- 7Allow the cakes to cool slightly before serving. Store in an airtight container to keep fresh for up to one week.
