Egg Garlands and Egg White Pudding (Muttamaala)

A popular traditional dessert from Malabar, featuring delicate egg garlands and a smooth egg white pudding, infused with the aromatic essence of cardamom.

  • 10 units Egg
  • 2 cups Sugar
  • 0.5 cup Milk powder
  • 1 teaspoon Green cardamom pods (Crushed)
  • 1 cup Water (For sugar syrup)

Instructions

  1. 1Separate the egg yolks from the egg whites. Beat the egg yolks thoroughly and set aside.
  2. 2In a wide pan, combine water and sugar. Boil until the mixture reaches a one-string consistency.
  3. 3Add 1-2 teaspoons of egg white to the boiling sugar syrup, mix well, and remove immediately to clarify the syrup.
  4. 4Make a small hole in the lid of an empty bottle. Pour the beaten egg yolk into the bottle. Increase the heat of the sugar syrup. Hold the bottle over the syrup and rotate in a circular motion, allowing the yolk to form thin strings. Cook for a minute, then reduce the heat and sprinkle some water. Strain the garlands from the syrup.
  5. 5In a mixing bowl, combine egg whites, sugar, milk powder, and crushed cardamom. Blend well using a blender. Pour the mixture into a circular dish and steam for 20-30 minutes.
  6. 6Cut the egg white pudding into desired shapes and serve alongside the egg garlands. Enjoy this delightful Malabar dessert.
