Egg Macaroni/Mutta Macaroni
This is an egg macaroni cooked in Kerala style, featuring a blend of spices and flavors typical of Indian - Kerala cuisine.
Ingredients
- 2 cups Macaroni
- 3 units Egg
- 3 tablespoons Coconut oil
- 1 teaspoon Mustard seeds
- 1 tablespoon Salt (Salt is added as per your taste.)
- 2 units Onions (Medium sized and finely chopped.)
- 2 units Tomatoes (Medium sized and finely chopped.)
- 2 units Green chillies (Finely chopped.)
- 1 teaspoon Ginger garlic paste
- 1 handful Curry leaves
- 1 teaspoon Chilli powder
- 1 teaspoon Turmeric powder
- 1 teaspoon Black crushed pepper
- 0.5 teaspoon Garam masala

Instructions
- 1In a pot, cook the macaroni with enough water, turmeric powder, and salt over medium heat for 10 minutes. Once cooked, drain the excess water and set aside.
- 2In a pan over medium heat, add coconut oil. Once hot, add mustard seeds and all the ingredients from the onion masala section. Sauté until the onions are transparent and well cooked. Adjust the salt as needed.
- 3Add all the masala powders to the pan and mix well. Cook until the masala is well cooked and fragrant.
- 4Beat the eggs in a bowl and add them to the onion masala. Mix thoroughly to combine.
- 5Transfer the cooked macaroni into the pan with the masala and eggs. Mix well to ensure the macaroni is evenly coated with the masala. Serve hot.
