Ingredients
- 4 units Egg
- 3 medium Onions (Finely chopped)
- 2 medium Tomatoes (Finely chopped)
- 2 units Green chillies (Finely chopped)
- 1 teaspoon Ginger (Finely crushed)
- 1 teaspoon Garlic cloves (Finely crushed)
- 1 tablespoon Salt
- 1 teaspoon Turmeric
- 1 teaspoon Cumin seeds
- 2 tablespoons Red chilli powder
- 1 teaspoon Black crushed pepper
- 4 tablespoons Coconut oil
- 1 teaspoon Mustard seeds
- 1 handful Curry leaves
- 1 handful Coriander leaves

Instructions
- 1Boil the eggs until fully cooked. Once boiled, cut them in half and set aside.
- 2Heat coconut oil in a pan over medium flame. Add cumin seeds and mustard seeds. When the mustard seeds begin to splutter, add onions, tomatoes, green chillies, salt, ginger, garlic, curry leaves, coriander leaves, turmeric powder, red chilli powder, and black crushed pepper. Sauté until the onions become transparent.
- 3Gently add the boiled egg halves to the pan and mix well with the spice base. Ensure the eggs are well coated with the spices. The spicy egg roast is now ready to be served with chapati or roti.
